Ingredients:
– 60 ml (¼ cup) finely diced shallots
– 4 ml (½ tsp) coarsely ground black pepper
– 125 ml (½ cup) white wine vinegar
– 60 ml (¼ cup) sparkling cider
Method:
Mix together all ingredients except the cider. Just before serving, add fresh cider. Spoon on oysters and accompany with sparkling cider.
